Chanterelle Pies


Ingredients for Making Chanterelle Pies

For the test

  1. Wheat flour 2 cups
  2. Fresh yeast 25 grams
  3. Sugar 1 teaspoon
  4. Warm water 1/4 cup
  5. Vegetable oil 1/4 cup
  6. Salt 1 big pinch

For filling

  1. Fresh chanterelles 500 grams
  2. Onion 2 pieces
  3. Vegetable oil 1 tablespoon
  4. Butter 1 tablespoon
  5. Raw brisket or bacon 200 grams
  6. Salt to taste
  7. White pepper to taste
  8. Provencal herbs to taste

For greasing pies

  1. Egg 1 piece

Inventory:

Cooking chanterelle pies:

Step 1: fry the onions and chanterelles.


Rinse the chanterelles very thoroughly to wash all the sand and plant debris from them. After drying, mushrooms, leave small ones whole, and cut large ones with a knife.
Peel the onion and crumble it into small cubes.
Combine the vegetable and butter in a pan, heat and sprinkle the onion.
Fry the onion until soft, add the chanterelles to it.

Season the chanterelles with salt, pepper and Provencal herbs and sauté them all together for several minutes.

Stir occasionally stirring the mushrooms with onions under the lid for several minutes until cooked.

Step 2: fry the bacon.


Cut the raw bacon or pork belly into small pieces.

Throw the bacon into a clean frying pan and sauté it, draining fat.

Step 3: mix the bacon, onion and chanterelles.


Mix the fried pork with onions and chanterelles, heat everything together, and then remove the finished pie filling from the heat and let it cool while the dough is preparing.

Step 4: prepare the dough.


Combine the sifted wheat flour with sugar, yeast and salt.

Then, gradually adding vegetable oil and water, replace the soft, supple dough.

Cover the finished mass with a towel or napkin to prevent it from weathering, and let the dough rise in a warm place for 10-20 minutes.

Step 5: we make pies with chanterelles.


When the dough rises, and the filling cools down, take up the modeling of pies.
